Baingan ka Bharta is comfort food, but making it can be a hassle. But with this air fryer method, making Baingan ka Bharta just got easy!

π Wash your egg plants (used 2 in this recipe) as usual, dry them and coat with oil. Place them in a warmed up Airfryer for 10 mins at 400 deg F.
π While thatβs roasting, dice 1 large onion and and 2 medium tomatoes, slit 2 green chilies.
π In a pan, put 2 tbsp of oil and once heated put in the slit chilies and chopped onions, cook till golden brown and then add in tomatoes. Cook for about 5 mins. You can also add ginger-garlic paste, but donβt need to as itβs quite flavorful without as well.
π Once the airfryer stops, take out eggplants and turn them around, carefully, and put them back in there for another 5 minutes at 400 deg F.
π To the onion and tomatoes, now add salt to taste, 1/2 tsp red chili powder, 2 tsp heaped coriander powder and 1/2 tsp of turmeric. Also add about 1/2 cup of green peas / sweet peas. Combine and cook.
π Once the airfryer beeps and is done, take the eggplant out carefully since itβs hot and let it cool down completely. Now peel the skin and using a fork or a masher, mash it roughly, but make sure there are no lumps.
π Now add this to the pan and cook for a quick 5 mins and itβs done! Garnish with coriander and serve hot with dal, roti and rice or just parathe!! Enjoy!
