I am not one to meal prep, I like to cook my food fresh every day as it’s relaxing for me! Not that there is anything wrong with meal prep, infact mommy is trying to do some basic stuff like make masale and freeze them, for me before she leaves and I am thankful for that. But full fledged meals I don’t do before because food is a mood for me and whenever I have tried to cook beforehand, I end up not wanting to eat it and it goes waste – true story!
So if I am being honest some days after work, an easy recipe is what I am in need of and one day in dire need to a quick sabzi and also to clean out the freezer, this sabzi was born!
Now I am sure many people make it often, but this was a first time for me and it turned out amazing. Infact since making this a couple of weeks back, I have made it twice on public demand, and by that I mean mommy and hubby demand, LOL!!

So here’s the easy recipe:
Ingredients:
– 1 medium bag of mixed vegetables thawed
– 3 medium potatoes peeled and cubed
– Pinch is asafoetida
– 1 teaspoon of cumin seeds
– 1 big dried red chilli
– 1 teaspoon coriander powder, 1/2 teaspoon turmeric powder, 1/2 teaspoon red chili powder and salt to taste.

Method:
– In a pan, heat oil and add asafoetida and cumin seeds when the oil is hot. Once the cumin seeds crackle, add the potatoes. Sauté for 5 minutes and then add the mixed vegetables and the masale/spices. Add 1/4th cup water and cover to cook. Let it cook on medium flame for 15 minutes, till tender. Garnish with cilantro and serve hot!!
