~ Introducing little Miss Kritika Shukla!!

Heya all you wonderful people, howdy?! I am doing good, a little sleep deprived, but I am not complaining as those moments are being spent with my favorite tiny human, my daughter, Kritika!

Our little miss sunshine turned 1 month old yesterday, 1 MONTH OLD, already, ALREADY?!?! Wowza! You know what they say, they say the truth, time surely flies when you are having fun! In some ways I feel like it’s definitely been a month and in some ways I am like wait what?! it’s been a month?! Can’t believe it!! It’s crazy to think that a month back she was still in my tummy and we were awaiting her arrival and now, I can’t even remember what life was before she entered our lives!!!

In this 1 month I have realized the importance of having you mom around when you deliver and also having a partner who is totally involved and dedicated 100% to you and your new adventure!!

Kritika’a 1st month has been full of fun, learning and understanding!! She loves to FaceTime with family, she’s learned to smile and yawn and let’s not forget, throw some tantrums at night and not let mummy papa or nani (maternal grandma) sleep, but she’s getting better now. If not in the arms of her “favorite” grandma or her papa, the crib is her favorite hangout spot and she really enjoys looking at the jungle wall decal that’s decorating her side of the room. She also enjoys her time on the Ingenuity swing rocker and the newest thing is tummy time on the activity mat. She loves to cuddle and also her skin time with me and drinking my milk, formula isn’t her favorite. She surely has me, her papa and Nani wrapped around my little fingers ☺️😊 and maasi (mom’s sister) and Peripa (mom’s sister’s hubby) are now wrapped around her finger too!! Other than that, she loves her time with Sun uncle (aka sunbathing) every morning and loves it when Nani gives her massages. Eagerly waiting to meet Nanu (mom’s dad) and all her favorite people from Papa’s side as well, Lucknow, she’ll be there soon, just waiting on her birth certificate and passport to arrive! 

In a nutshell, she’s a Diva and a just perfect the way she is!

~ Teriyaki Chicken!!

One of my all time favorite Chinese dish is Teriyaki Chicken and today I am sharing a tried, tested and trusted recipe.


–  ¼ cup soy sauce

– ⅓ cup freshly squeezed orange juice

– 3 tbsp honey

– 1 tsp finely grated fresh ginger

– 1 tsp sesame oil (you can use any other oil as well, but sesame oil works best)

– 2 lbs boneless skinless chicken thighs, fat removed

– 1 tbsp olive oil

– 1½ tbsp unsalted butter

– Green onion and sesame seeds for garnish


1. In a large bowl, mix together all marinade ingredients: ¼ cup soy sauce, ⅓ cup orange juice, 3 tbsp honey, 1 tsp ginger and 1 tsp sesame oil.

2. Cut chicken into 1-inch pieces and place into marinade. Stir and cover with plastic wrap and marinate on the counter 20 min. Do not refrigerate. 

3. Heat a non-stick pan over medium-high heat. Add 1 tbsp olive oil. Remove chicken from marinade and put the chicken in the hot pan and sauté, stirring occasionally until golden brown and cooked through.

4. Transfer chicken to a bowl.

5. Remove pan from heat and pour the marinade into the pan, add 1½ tbsp butter and place back over medium/high heat. Bring to a boil stirring constantly, until slightly thickened and then remove from heat. 

6. Add chicken back to the pan and stir to combine. Serve over hot white rice or brown rice, garnished with fresh green onion and a sprinkle of sesame seeds.
